- 4 (6 oz.) boneless, skinless chicken breast halves
- 3 Tbs. all-purpose flour
- ¼ tsp. salt
- ¼ tsp. pepper
- ½ cup plain dry breadcrumbs
- 2 cloves garlic, minced
- 1½ tsp. grated lemon zest
- 1 egg, beaten
- 2 Tbs. oil
Instructions
PrintHeat oven to lowest setting. Between sheets of plastic wrap, pound chicken to 1⁄2" thickness. In bowl, mix flour, salt and pepper. In second bowl, mix breadcrumbs, garlic and zest. Coat chicken in flour, egg and breadcrumbs. Working in two batches, in skillet, cook chicken in hot oil over medium-low heat, turning, until cooked through, 4–5 min. per side. Keep warm in oven between batches.
