Simply Satisfying Meat Lovers’ Cauliflower Pizza Recipe Is a Low-Carb Twist on a Classic

Pizza is one of my all-time favorite comfort foods. But lately, I’ve been trying to cut back on carbs. That’s why this Meat Lovers’ Cauliflower Pizza recipe is my new go-to choice when a craving strikes. It’s packed with all the flavors I love. Best of all, it’s topped with pepperoni and sausage so it really satisfies hungry appetites.

Most grocery stores carry cauliflower crust in the freezer section. But it’s so easy to make your own. This one starts with pre-made cauliflower rice, egg, Parmesan, mozzarella and a trio of dried herbs. It’s key to bake the crust first so it turns out extra crisp and delicious. Top with jarred sauce, even more cheese, the meat and broil until ooey-gooey good. So simple! Watch our video and see how easily it comes together. Then leave us a comment.

Ingredients

  • 1 Tbs. olive oil, for greasing
  • 2½ cups store-bought frozen cauliflower rice
  • 1 large egg, beaten
  • ¾ cup grated Parmigiano-Reggiano cheese
  • ¾ cup grated low-moisture whole-milk mozzarella cheese
  • ½ tsp. dried basil
  • ½ tsp. dried oregano
  • ½ tsp. dried thyme
  • Celtic sea salt
  • Freshly ground black pepper
  • ¾ cup store-bought low-carb marinara sauce
  • ¾ cup grated low-moisture whole-milk mozzarella cheese
  • ¼ cup pepperoni slices
  • 2 links Italian sweet sausage, casings removed, browned, crumbled and cooled

Prepare crust: Preheat oven to 425°F. Grease baking sheet with olive oil and place in oven to preheat.

Microwave frozen cauliflower rice according to package directions. Transfer cauliflower rice to bowl and add egg, Parmigiano, mozzarella, basil, oregano, thyme and salt and pepper to taste. Remove hot baking sheet from oven. Spread cauliflower mixture onto hot pan with silicone spatula to make rectangle about ¼" thick. Return to oven to bake until lightly golden brown, 15–18 min.

For toppings: Preheat broiler to high. Spread sauce evenly over top of baked crust. Top with mozzarella, pepperoni and sausage.

Return to broiler until cheese and pepperoni are lightly browned, 4–5 min., rotating pan front to back halfway through. Allow to cool for 5 min. before serving.
