Mini Turkey Pot Pies
Transform leftover green bean casserole and hearty turkey into a down-home comfort food favorite. The best part? We used premade puff pastry to ensure these delights only take 15 minutes to prep!

Ingredients
- 2 cups prepared green bean casserole
- ¼ cup frozen corn
- ¼ cup frozen peas
- 2 carrots, finely chopped
- ½ cup milk
- ¼ cup turkey stock
- 2 cups shredded roast turkey
- 2 sheets frozen puff pastry, thawed
- 1 large egg, beaten
Instructions
- Heat oven to 350°F. In bowl, toss green bean casserole with next 6 ingredients. Divide mixture evenly among 6 greased 4″ ramekins.
- With pizza cutter, slice puff pastry sheet into six 6″ squares. Lightly press one square on top of each ramekin. Brush tops with beaten egg. Garnish with sesame seeds, if desired. Bake 30 min. or until pastry is puffed and golden brown.
