Mint-Layered Fudge Brownies

Ingredients

  • 1 (18.2 oz.) pkg. dark chocolate fudge brownie mix
  • 2 cups butter
  • 1½ cups confectioners’ sugar
  • 1 tsp. peppermint extract
  • Liquid green food coloring (optional)
  • 1½ cups semisweet chocolate chips

Instructions

  1. Heat oven to 350°F. Line 9″ x 13″ baking pan with foil; grease foil. Prepare brownie mix as package directs. Bake 22 to 25 min. or until done. Let cool. Chill at least 1 hr.
  2. Using electric mixer, beat 1¼ cups butter with powdered sugar and peppermint extract 2 min. or until fluffy, scraping side of bowl as needed. If desired, tint pale green. Spread over chilled brownies. Return to fridge.
  3. Meanwhile, in glass bowl, microwave chocolate chips and remaining butter until melted. Whisk to combine. Let stand until cool but still liquid. Spread over frosting. Chill 1 hr. Remove foil from brownies; cut into squares.
