Quick tip: Butterflying the pork roast makes it perfect for holding the stuffing. But you need to make sure the pork is thin enough so that it cooks evenly. To do this, simply place the meat between two sheets of plastic wrap and pound it to ½” thickness all over using a mallet or heavy pan, and voilá!

Ingredients
- 2 Tbs. butter
- 1 lb. onions, chopped
- 1 tsp. salt
- ⅓ cup seasoned dry breadcrumbs
- ¼ cup mango chutney
- ¼ tsp. pepper
- 3 lb. boneless pork loin roast, butterflied, pounded to 1⁄2" thickness
Instructions
PrintIn 12" nonstick skillet, melt butter over medium heat. Add onions and 1⁄4 tsp. salt; cook, stirring, until browned, 15 min.; add 1 cup water. Cover; over medium-low heat, cook until softened, 10 min. Uncover; cook until liquid evaporates. Let cool. Stir in breadcrumbs and chutney.
Rub pork with pepper and remaining salt; place fat side down on work surface. Spread filling over pork to within 1" of edges. Starting with short side without fat, roll up jelly-roll style; tie. Place in roasting pan, fat side up. Roast until pork registers 145°F, 55–60 min. Let stand 15 min. before slicing.
