Cheesy & Easy Pork Paninis Recipe is a Lunch You’ll Love

What to make for lunch is one of my biggest challenges. I tend to fall into a salad and soup rut, but eating the same basic meal every day gets boring. That’s why I’m always looking for ways to liven up my lunch game. And this pork paninis recipe has quickly become one of my favorites. It elevates lunch way beyond a basic sandwich, and makes it into something special without creating a lot of extra work. And it tastes absolutely delicious! Trust me when I tell you that this is a lunch I look forward to all morning.

If you’ve never made a panini, don’t worry —it’s easy! This Italian-inspired sandwich is quickly toasted in a pan and served warm with the cheese all melty. We top it with a quick-prep basil mayo, which adds even more flavor. Watch our video to see how easy the recipe is to make.

Ingredients

  • 1/3 cup mayonnaise
  • 1/3 cup chopped fresh basil
  • 1 egg, beaten
  • 4 (1/3“ thick) slices cooked boneless pork roast, 8 oz.
  • 1/3 cup plain dry breadcrumbs
  • 1 Tbs. olive oil
  • 8 slices sourdough bread, 8 oz.
  • 2 tomatoes, sliced
  • 1 cup shredded mozzarella cheese, 4 oz.

In small bowl, combine mayonnaise and basil; reserve. In separate bowl, whisk egg until lightly beaten. Working with 1 pork slice at a time, dip in egg, then breadcrumbs. In large nonstick skillet, heat oil over medium heat. Add pork; cook, flipping once, until golden brown, about 2 min. per side. Transfer to plate; wipe skillet clean with paper towel. Spread one side of each slice of bread with reserved mayonnaise mixture. Layer 4 slices of bread, mayonnaise side up, with tomatoes, pork and cheese. Top with remaining bread, mayonnaise side down.

Coat same skillet with cooking spray; heat over medium-low heat. In batches, add sandwiches and cook, flipping once, until lightly browned and cheese is melted, about 3 min. per side.
