These sparkling gems are perfect for a Christmas party or even a cookie swap. - 1 box (13.25 oz.) butter pecan cake mix
- ¼ cup oil
- 3 eggs
- 1 cup ground toasted pecans
- 1 container (16 oz.) vanilla frosting
- 1/2 tsp. rum extract
- 2 (16 oz.) pkgs. red or green candy melts
- 36 wooden picks
- Edible green or red lustre spray, green or red gumdrops
- Thin ribbon
Instructions
PrintHeat oven to 350°F. Combine cake mix, 1 cup water, oil and eggs in large bowl. Beat on medium speed 2 min. then stir pecans into batter. Pour into greased 9x13 inch baking pan and bake 24–29 min. Cool and crumble into small pieces.
In medium bowl, beat frosting and rum extract on medium for 1–2 min. Stir into crumbled cake. Line 2 baking sheets with parchment. Form cake mixture into 36 even pieces. Place on sheets; refrigerate 1 hr. Roll mixture into balls; freeze 1 hr.
Line large baking sheet with parchment. In large microwave-safe bowl, melt red or green candy melts according to pkg. directions, whisking until smooth. Dip frozen cake balls into candy melts, allowing excess to drip off. Place on prepared baking sheet; let stand at room temperature to set.
Spray candy-coated balls with edible lustre spray to match candy coating. Place a matching gumdrop on top of each cake bite. Skewer with wooden picks. Tie ribbon around pick.
