Not your same old joe — we switched to chicken and added red pepper, corn and taco sauce to take this dinner favorite from ho-hum to yum.

Ingredients

  • 1 Tbs. olive oil
  • 1 onion, thinly sliced
  • 1 red pepper, thinly sliced
  • 1 lb. ground chicken
  • ¼ tsp. salt
  • 1 (16 oz.) jar mild taco sauce
  • 1 cup frozen corn, thawed, drained
  • 1 cup prepared coleslaw
  • 6 rolls, split
  • 4 oz. Monterey Jack cheese, shredded

Instructions

  1. In large nonstick skillet, heat oil over medium-high heat. Add onion and pepper; cook, stirring occasionally, until softened, 4–5 min. Add chicken and salt; cook, stirring to break up meat, until no longer pink, 7–8 min.
  2. Add taco sauce and corn. Reduce heat to medium-low; cook, stirring occasionally, until flavors blend and sauce thickens, about 6 min. Divide coleslaw evenly among roll bottoms, then top with chicken mixture, cheese and roll tops.
