Smoky Ancho Turkey Chili

Ingredients

  • 2 Tbs. olive oil
  • 1 onion
  • 2 poblano peppers
  • 4 cups diced roast turkey
  • 4 cloves garlic, minced
  • 2 tsp. ground cumin
  • 2 tsp. ground coriander
  • 1 tsp. ancho chile powder
  • ½ cup brewed coffee
  • 1 cup amber beer
  • 1 (15 oz.) can tomatoes
  • 1 (15 oz.) can pinto beans

Instructions

  1. In large pot over medium-high heat, heat olive oil. Dice onion and peppers. Add to pot with turkey, garlic and spices. Cook 5 min.
  2. Add coffee, beer, tomatoes and beans to pot. Bring to a boil; reduce heat and let simmer 30 min. Season with salt and pepper to taste. Garnish with cranberry salsa, avocado, sour cream and fresh cilantro, if desired.
