Slow Cooker Spicy Jambalaya Recipe is Oh-So Satisfying

After a long day, cooking dinner can sometimes feel a little overwhelming. That’s why we love slow cooker suppers so much. They cook all day, and by the time you’re ready to eat at night, dinner is done. All you have to do is dish out the goodness and enjoy. That said, it’s fun and flavorful to switch up your slow-cooker game with new recipes. And that’s why you need to give this spicy jambalaya recipe a try. It preps in just 20 minutes, and after hours in the slow cooker, it’s filled with delicious Creole flavor. It’s so tasty, you’re going to want a second helping — guaranteed!

We use andouille sausage for authentic Cajun flair, but for a bit less spice, you can swap in precooked chicken sausage. Then add the chicken, veggies and broth and let the slow cooker do its magic.

Ingredients

  • 3 cups chicken broth
  • 1 (14.5 oz.) can diced tomatoes
  • 2 tsp. Creole seasoning
  • 2 links andouille sausage (6 oz.)
  • 1 onion, chopped
  • 1 rib celery, chopped
  • 1 red pepper, diced
  • 1 lb. boneless, skinless chicken thighs
  • 1 cup rice
  • 1 scallion, chopped

Instructions

Combine broth, tomatoes with juice and seasoning; reserve. Cut sausage into ¼ "-thick slices. Place onion, celery and red pepper in 6-qt. slow cooker. Top with sausage and chicken. Pour reserved broth mixture over top. Cover; cook on low 3½ hrs. Stir in rice. Cover and cook on low 1 hr.

Using 2 forks, shred chicken. Stir back into rice mixture. Top with scallion.
