Whether you’re planning a summer holiday celebration, hosting friends for a Saturday night cookout or going on a picnic, stuffed mushrooms make a yummy and satisfying appetizer. I was looking for a good stuffed mushrooms recipe for my own Memorial Day gathering, and the next thing you know, the pros in our test kitchen came up with this easy and irresistible version made in the air fryer! It’s delicious, with a savory stuffing of fresh veggies tossed in a tangy sauce. The flavorful filling is the perfect complement to the meaty little mushroom caps.

This recipe is super simple to make: Just chop up some tomatoes, eggplant, zucchini, and yellow pepper, mix with some garlic and shallots, whip up the sauce and combine with the veggies. Put the filling in the mushrooms and pop them into the air fryer — that’s all there is to it! Top the mushrooms with some fresh parsley and serve. Guests will love them — and so will you!

Ingredients

  • 3 Tbs. mayonnaise
  • 1 Tbs. white balsamic
  • 1 egg white
  • ⅛ tsp. salt
  • ⅛ tsp. pepper
  • 1 cup diced eggplant
  • 1 tomato, seeded, diced
  • ½ cup diced zucchini
  • ½ cup diced yellow pepper
  • 1 large shallot, chopped
  • 1 clove garlic, minced
  • 16 large white mushrooms,
  • stems removed
  • Parsley leaves (optional)

Instructions

In bowl, mix mayonnaise, vinegar, egg white, salt and pepper. Add eggplant, tomato, zucchini, yellow pepper, shallot and garlic; toss until coated. Spoon into mushrooms.

Place crisper plate in basket of 7-qt. air fryer; coat with cooking spray. Place basket in air fryer; heat to 300°F. In 2 batches, add mushrooms to basket. Air-fry until cooked through, about 10 min. Transfer to serving plate. If desired, garnish with parsley.
