Satisfy Your Pasta Craving with This Quick Turkey Bolognese Recipe

Classic bolognese gets a delicious upgrade — and speeds to the table in just 35 minutes

When you’re craving pasta in a flavorful sauce, this turkey Bolognese recipe checks every box. It’s super satisfying and delicious, thanks to the rich and hearty sauce. Bolognese is a classic Italian meat sauce typically made with ground beef or pork or a combination of the two. The sauce originated in Bologna, a city in northern Italy. We give our version a clever twist by using cooked, shredded turkey (a great way to use up holiday leftovers) instead of ground meat. This gives the sauce even more depth, yet makes it healthier, too. Then we add marinara, roasted red peppers, basil and some red pepper flakes for just a bit of a kick.

But the real star ingredient of this dish is … shredded carrots! They add some sweetness to the sauce, perfectly balancing the bite of the marinara. The result is absolutely luscious.     Ingredients

    • 2 Tbs. olive oil
    • 1 onion, minced
    • 2 garlic cloves, minced
    • 3 cups shredded cooked turkey (dark meat preferred)
    • 1 (24 oz.) jar marinara sauce, such as Newman’s Own
    • 1 (14.5 oz.) can diced tomatoes
    • ½ cup shredded carrots
    • ½ cup minced jarred roasted red peppers
    • Pinch of red pepper flakes
    • ¼ cup chopped basil
    • 12 oz. spaghetti

    Heat oil in large, deep skillet over medium heat. Add onions and garlic; cook 5 min. or until translucent. Add turkey and cook 1 min. Stir in marinara sauce, diced tomatoes, shredded carrots, roasted red peppers and pepper flakes; bring to a boil. Reduce heat to medium-low and let simmer 15 min. or until flavors have blended, stirring frequently. Stir in chopped fresh basil; season to taste with salt and pepper. 

    Meanwhile, cook pasta as package directs. Drain, reserving 1 cup cooking water. 

    Add pasta to Bolognese sauce and toss well, adding enough reserved cooking water to moisten. Serve immediately with shaved Parmesan, if desired.
