Ingredients

  • 1 lb. ground beef
  • 1½ cups no-sugar-added tomato pasta sauce, from 23.5-oz. jar
  • 2 Tbs. olive oil
  • 2 cloves garlic, minced
  • 2 (1 lb.) conts. refrigerated zucchini noodles
  • ½ tsp. salt
  • ¼ tsp. pepper
  • 1 tsp. grated lemon zest
  • ¼ cup Parmesan cheese shavings
  • Fresh basil leaves (optional)

In pot over medium-high heat, cook beef, stirring occasionally, until browned, 7–8 min. Add sauce; over medium-low heat, cook until thickened, 15 min. Cover; remove from heat.

In large nonstick skillet, heat 1 Tbs. oil over medium-high heat. Add half of garlic; cook, stirring, 30 sec. Add 1 cont. zucchini, 1⁄4 tsp. salt and 1⁄8 tsp. pepper. Cook, stirring, until just softened, 1–2 min. Remove; drain zucchini. Repeat with remaining oil, garlic, zucchini, salt and pepper. Combine zucchini mixtures with zest. Transfer to serving bowl. Top with meat sauce, cheese and, if desired, basil.
