Your guests will marvel when you present this hearty hors d’oeuvre made from simple on-hand ingredients like eggs, canned potatoes, and bacon bits.
- 2 scallions
- 1 (15 oz.) can sliced potatoes
- 8 eggs
- 1/4 c. milk
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 1/2 c. grated sharp white cheddar cheese
- 1/3 c. bacon bits
Heat oven to 375°F. Chop white parts of scallions; cut green parts into thin 1” strips. In bowl, whisk together eggs, milk, salt, and pepper. With spoon, stir in cheddar cheese, both white and green parts of scallions, and potatoes.
Coat ovenproof 12” nonstick skillet with cooking spray; heat over medium heat. Pour egg mixture into skillet; cook until edges just start to set, about 2 min.
Transfer to oven. Bake 15 min. or until puffed and set in center. Cool slightly. Serve topped with bacon bits.
