Nutrients in this delicious salad sharpen focus by 50 percent.
- 4 peaches, halved and pitted
- 2 tbsp. olive oil
- 1 tbsp. brown sugar
- 2 c. baby greens
- 1 tsp. lemon juice
- 2 tbsp. blue cheese
- 1 tsp. chopped chives
Heat broiler. Brush peaches with 1 Tbsp. oil; transfer to baking sheet, cut sides up. Sprinkle with brown sugar. Broil until lightly browned, 4–5 min.
Toss greens with lemon juice and remaining oil; season to taste with salt. Divide among plates; top with peaches. Sprinkle with blue cheese and chives.
