When I’m craving something sweet, visions of cupcakes start dancing in my head. Cupcakes are as deliciously satisfying as cake but they’re much easier to make, plus they’re portable and require no slicing or utensils. I can grab one and eat it on the go, or sit down at the table with a cup of coffee and really savor it.  So when our test kitchen served up this scrumptious blueberry cupcakes recipe, I was thrilled. First of all, they are gorgeous with their brilliant purple frosting. And their flavor is incredible, especially now that blueberries are in season. I was hooked from the get-go. Honestly, I can’t stop making these cupcakes and serving them to guests (and myself, of course!).

They’re also quick and easy to whip up. So when you need a cupcake fix, this recipe has got you covered! And you can have fun decorating them however you like. If you’re feeling inspired, go all out with fresh berries and edible flowers. Or simply frost and enjoy.

Ingredients

  • 1 (15.25 oz.) pkg. French vanilla cake mix
  • 3 eggs
  • ⅓ cup oil
  • 1 (6 oz.) cont. blueberries
  • 2 cups butter, at room temp.
  • 4 cups confectioners’ sugar
  • 2 tsp. vanilla extract
  • 1 cup wild blueberry preserves

Heat oven to 350°F. Line 24 muffin cups with cupcake liners. Prepare cake mix per package directions with eggs, oil and 1 cup water. Divide among liners; top with blueberries. Bake until pick inserted in centers comes out clean, 18–20 min. Cool 10 min. Transfer from pans to rack; cool.

On medium-high speed, beat butter until fluffy. On low, beat in sugar and vanilla until combined. On mediumhigh, beat until fluffy, 2–3 min. Beat in preserves. Transfer frosting to pastry bag fitted with star tip; pipe on cupcakes. Garnish as desired.
