Broccoli salads make the perfect summer side for potlucks and picnics. The florets are sturdier than leaf lettuce so they can stand up to the dressing for longer and don’t wilt. Plus, they’re a great way to get more healthy veggies into your diet. That’s why I love this Broccoli-Avocado Salad recipe. It comes together in no time and it’s chock full of good-for-you nutrients.
Broccoli and carrots are loaded with fiber and antioxidants. We give the broccoli a quick blanch to enhance it’s bright green color, but you can certainly skip this step and the salad would be just as delicious. Creamy avocado is rich in heart-healthy fats and anti-inflammatory compounds. Mushrooms contain selenium, vitamins and minerals and help maintain a healthy immune system. Ingredients
- 6 cups broccoli florets
- 1 avocado
- 3 Tbs. olive oil
- 3 Tbs. red wine vinegar
- 2 Tbs. minced red onion
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 cup baby portobello mushrooms, sliced
- 1 cup basil leaves
- 1 carrot, thinly sliced
- 2 Tbs. assorted seeds, such as pumpkin and sunflower
- 2 Tbs. pomegranate arils
Instructions
PrintIn large pot of salted boiling water, cook broccoli until crisp-tender, about 2 min. Drain; rinse under cold water until cool; pat dry. Halve avocado; remove pit and peel. Slice crosswise into 1/4”-thick slices.
In large serving bowl, whisk together olive oil, vinegar, onion, salt and pepper. Add mushrooms, basil, carrot, assorted seeds, pomegranate arils, broccoli and avocado; toss gently until evenly coated and combined.
