Ingredients

  • 1 cup instant polenta
  • 2 Tbs. olive oil
  • 1 clove garlic, minced
  • ½ tsp. salt
  • ¼ tsp. pepper
  • 1⅓ cups shaved Parmesan
  • 1½ lbs. boneless, skinless chicken breast halves, cut into 1½"x1" pieces
  • 2 tomatoes, cut into ¼"-thick slices
  • 1 zucchini, thinly sliced
  • ½ cup Caesar croutons
  • 1 cup torn romaine lettuce
  • ⅓ cup creamy Caesar dressing

Heat oven to 400°F. Grease 2-qt. baking dish. Prepare polenta per package directions with 1 Tbs. oil, garlic, ¼ tsp. salt and pepper. Stir in 1 cup Parmesan. Spread in dish. In nonstick skillet, heat 1 Tbs. oil over medium-high. Add chicken and ¼ tsp. salt. Cook, turning, until no longer pink, 10–12 min. Top polenta with tomatoes and zucchini. Cover; bake until tender, 15–20 min. Top with chicken. Broil 2–3 min. Add croutons, lettuce and remaining Parmesan. Drizzle with dressing.
