Chocolate-Coconut Truffles

We love finishing these bites with shredded coconut, but you can roll them in chopped nuts or cocoa powder.

  • ½ cup whole almonds
  • ½ cup pitted dates
  • 4 Tbs. unsweetened shredded coconut
  • 1½ Tbs. unsweetened cocoa powder
  • 1 Tbs. 60% semisweet chocolate chips
  • 1½ tsp. vanilla or almond extract


  1. In processor, combine almonds, dates, 2 Tbs. shredded coconut, cocoa powder, chocolate chips and extract until finely chopped. Pulse in 1 Tbs. water. Process until mixture comes together.
  2. Roll into 1″-thick log. Cut into 12 pieces. Roll into balls, then dip into remaining coconut. Store in refrigerator until ready to serve.
