Chocolate-Coconut Truffles
We love finishing these bites with shredded coconut, but you can roll them in chopped nuts or cocoa powder.

Ingredients
- ½ cup whole almonds
- ½ cup pitted dates
- 4 Tbs. unsweetened shredded coconut
- 1½ Tbs. unsweetened cocoa powder
- 1 Tbs. 60% semisweet chocolate chips
- 1½ tsp. vanilla or almond extract
Instructions
- In processor, combine almonds, dates, 2 Tbs. shredded coconut, cocoa powder, chocolate chips and extract until finely chopped. Pulse in 1 Tbs. water. Process until mixture comes together.
- Roll into 1″-thick log. Cut into 12 pieces. Roll into balls, then dip into remaining coconut. Store in refrigerator until ready to serve.
