Peach ‘n’ Berry Cookie Stacks

Pecan sandies are the perfect complement to fresh fruit and orange-scented cream in these Southern-inspired bites.

  • 4 peaches or nectarines, pitted, sliced
  • 2 Tbs. granulated sugar
  • ½ cup heavy cream
  • 1 Tbs. confectioners’ sugar
  • 1 tsp. orange zest
  • 1½ cups fresh raspberries
  • 8 pecan sandies


  1. Toss peaches with granulated sugar; let stand until syrup forms, about 5 min. On medium speed, beat cream and confectioners’ sugar until soft peaks form, 1-2 min. Stir in orange zest.
  2. Reserve ½ cup whipped cream and 8 raspberries. Divide peach slices and juice evenly over 4 cookies. Top with remaining whipped cream then raspberries and remaining cookies. Garnish with reserved whipped cream and raspberries.
