Pumpkin Mug Cake

This seasonal confection cooks up in mere seconds — top with whipped cream for extra decadence.

  • 2 tsp. coconut oil
  • ¼ cup oat flour
  • ½ tsp. pumpkin pie spice
  • ½ tsp. baking powder
  • 2 Tbs. pumpkin puree
  • ¼ cup maple syrup
  • 2 Tbs. almond milk
  • 1 egg
  • Whipped cream and chopped nuts (optional)


  1. In large heatproof mug, microwave coconut oil until melted, about 20 sec. Add remaining ingredients. Using a whisk, blend until well-combined and smooth.
  2. Microwave 2 min. or until puffed and cooked through. Let cool 2 min. before serving. If desired, garnish with whipped cream, cinnamon and chopped nuts.
