Pumpkin Mug Cake

Ingredients
- 2 tsp. coconut oil
- ¼ cup oat flour
- ½ tsp. pumpkin pie spice
- ½ tsp. baking powder
- 2 Tbs. pumpkin puree
- ¼ cup maple syrup
- 2 Tbs. almond milk
- 1 egg
- Whipped cream and chopped nuts (optional)
Instructions
- In large heatproof mug, microwave coconut oil until melted, about 20 sec. Add remaining ingredients. Using a whisk, blend until well-combined and smooth.
- Microwave 2 min. or until puffed and cooked through. Let cool 2 min. before serving. If desired, garnish with whipped cream, cinnamon and chopped nuts.
