You can grill year-round, no matter where you live. If weather permits, make this salad on your grill outdoors. If not, grill it on your stovetop in a grill pan. The dish is versatile! And It’s simple to make. First, succulent shrimp are marinated in a zesty dressing and then quickly grilled. Next up, we grill crusty Italian bread followed by some avocado. Then we cut everything up and toss it all together with dressing. The bread soaks up the tangy flavor of the dressing, but stays perfectly crunchy. Ingredients

  • 8 (10") skewers
  • 1 lb. peeled, deveined jumbo (21–25) shrimp
  • ⅔ cup bottled olive oil and vinegar salad dressing
  • 3 (½" thick) slices crusty Italian bread
  • 1 avocado, pitted, peeled, halved
  • 1 scallion, sliced
  • 2 tomatoes, each cut into 8 wedges
  • ½ cup fresh basil leaves Cracked pepper (optional)

If using wooden skewers, first soak in water for 15 min. Prepare grill for mediumhigh direct-heat cooking. In medium bowl, toss shrimp with 2 Tbs. dressing; thread onto skewers. Grill skewers, turning once, until shrimp are opaque, 3–5 min. per side. Remove from grill; reserve.

Grill bread, flipping once, until grill marks appear, 1–2 min. per side; reserve. Grill avocado halves cut side down until grill marks appear, 1–2 min.

Remove shrimp from skewers. When cool, tear bread into 1" pieces. Cut avocado into chunks. In large serving bowl, stir together scallion and remaining dressing. Add bread, shrimp, avocado, tomatoes and basil; gently toss to combine ingredients until bread absorbs dressing mixture. If desired, sprinkle salad with pepper.
