- 2 oranges
- 2 Tbs. olive oil
- 2 Tbs. mayonnaise
- 1 Tbs. balsamic vinegar
- 1/8 tsp. pepper
- 6 slices bacon
- 1 lb. peeled, tails-on, deveined jumbo shrimp (size 2 1/25)
- 1 large head butter lettuce, torn
- 1 avocado, peeled, pitted, sliced
- 2 scallions, sliced
Instructions
PrintUsing small sharp knife, cut rind from oranges; cut between membranes to release segments. In bowl, whisk together oil, mayonnaise, vinegar and pepper; reserve.
Coat large nonstick skillet with cooking spray; heat over medium-high heat. Add bacon; cook, flipping once, until crisp, 3–4 min. per side. Drain on paper towels.
When cool, break bacon into pieces. Discard all but 1 Tbs. fat from skillet. Heat over medium-high heat; add shrimp. Cook, flipping once, until opaque in centers, about 2 min. per side; let cool slightly. Transfer lettuce to serving plate. Top with avocado, scallions, orange segments, bacon and shrimp. Drizzle with reserved dressing.
