Lemon-Paprika “Rotisserie” Chicken

Ingredients

  • 1 stick butter, softened
  • 4 lemons, 2 zested and juiced, 2 quartered
  • 1 Tbs. paprika
  • 1 (6 lb.) whole chicken

Instructions

  1. In bowl, mash butter, 1 Tbs. lemon zest and paprika; season. Spread under and over chicken skin. Place lemon quarters in cavity. Place chicken in slow cooker; pour in ¼ cup lemon juice. Cover; cook on high 4 hrs. or on low 6½ hrs. or until 165°F.
  2. Heat broiler. Remove chicken to baking sheet; broil 4 min. or until skin is golden brown and starting to crisp. Let sit 20 min. before carving. Serve with pan juices, if desired.
