I’m a big fan of one-pot meals like soups and stews. They’re usually chock full of fresh veggies and other good-for-you ingredients. And simmering everything together means most of the nutrients are retained right in the broth or sauce. Barley is a superfood high in fiber and low in calories. But brown rice would also be a good choice. Then a sprinkling of curry powder adds savory flavor. Plus, this spice blend contains turmeric, which has some surprising anti-inflammatory health benefits. To finish, we wilt in spinach — it’s full of vitamins, minerals and antioxidants. Ingredients

  • 3 carrots, peeled
  • 2 celery ribs
  • 2 tbsp. olive oil
  • 1/2 of 1 (12 oz.) pkg. frozen chopped onion, thawed, drained (1 1⁄2 cups)
  • 1 tbsp. curry powder
  • 2 (14.5 oz.) cans chicken broth
  • 3 c. shredded rotisserie chicken, about 9 oz.
  • 3/4 c. quick pearled barley
  • 6 cups baby spinach
  • 1/3 c. plain nonfat yogurt
  • Chopped cilantro

Dice carrots and celery. In pot, heat oil over medium heat. Add onion; cook, stirring occasionally, until softened, about 5 min. 

Add carrots, celery and curry powder. Cook, stirring often, until softened, 7–8 min.

Stir broth and 2 cups water into vegetable mixture. Bring to a boil; reduce heat to medium-low. Partially cover; cook until flavors blend, about 10 min.

Stir in shredded chicken and barley. Cook until barley is tender, 10 min. Stir in spinach and yogurt. Stir in chopped cilantro.
