This S’Mores Brownies Recipe Combines Two Favorites in One Gooey, Chocolaty Bite

Fusion desserts have an A+ in our grade book. And with the weather getting warmer, we thought to combine two of our absolute favorite summertime treats: s’mores and brownies. Our s’mores brownies recipe will bring back memories of childhood in a handheld, mess-free bite. We use brownie mix to speed up the baking process so your brownies have time to chill. This allows them to firm up so they cut easier. And while this recipe uses store-bought marshmallows, you can learn how to make homemade marshmallows for a fluffy alternative. Serve your brownies with vanilla ice cream and a drizzle of chocolate sauce for a truly decadent experience.

If you want to elevate this s’mores brownie recipe, take your finished brownies and pop them under the broiler. After a minute or two, you’ll get a beautiful golden char. This warmed version takes us right back to the campfire — tell us if you tried this below!

Ingredients

  • 16 sheets cinnamon graham crackers, from 14.4-oz. pkg.
  • 2 Tbs. sugar
  • 1/3 cup butter, melted
  • 1 (18.2 oz.) pkg. dark chocolate fudge brownie mix
  • 1 egg
  • 1/2 cup oil
  • 1 (8 oz.) pkg. stacker marshmallows

Instructions

Heat oven to 350°F. Line 13”x9” baking pan with enough foil to overhang sides by 2”; coat with cooking spray.

In a food processor, process graham crackers and sugar until finely ground. Add butter; process until blended. Press mixture into bottom of pan. Bake until set, 8 min. Let cool.

Prepare brownie mix per package directions with egg, oil and ⅓ cup water. Spread evenly over crust. Bake until toothpick inserted in center comes out with moist crumbs, 18–20 min. 

Heat broiler. Cover top of brownies with marshmallows. Broil until golden, 10–15 sec. Let cool. Chill 1 hr.; slice.
