Stunning Stacked Star Sandwich Cookies Are So Impressive Yet Easy To Make

I love the Fourth of July—cookouts, festive drinks, patriotic desserts and fireworks lighting up the night sky! And our Star Sandwich Cookies won’t disappoint. With their bright hue and delicious homemade filling, they deserve a place of honor at your Independence Day get-together. What I like about these cookies are how simply elegant they are—the clean star shapes really show off the red, white and blue theme. Once you’ve mastered the recipe, you can even make these for other holidays. Simply change the coloring in the dough and the shape of the cookie cutter. Use only orange coloring plus a pumpkin shape for Halloween or maroon and yellow with a leaf-shape for Fall. And since they start with a tube off chilled cookie dough, they are a real dream to whip up!

Ingredients

  • 1 (16.5 oz.) tube refrigerated sugar cookie dough
  • 1/4 cup all-purpose flour
  • 1/4 tsp. almond extract
  • 1/2 tsp. red concentrated food coloring
  • 1/4 tsp. royal blue concentrated food coloring
  • 6 Tbs. butter, at room temp.
  • 6 oz. cream cheese, at room temp.
  • 2 cups confectioners' sugar

Knead first 3 ingredients; divide in half. Tint 1 red and 1 blue. On floured surface, roll doughs to 1⁄4" thick. Using 21⁄2" star cutter, cut out shapes. Transfer to baking sheet. Bake until crisp, 10–12 min. Let cool 5 min.; transfer to rack; cool.

On medium speed, beat butter and cream cheese until fluffy, 2 min. On low, beat in sugar; on medium-high, beat until fluffy, 2–3 min. Spread onto red cookies; top with blue cookies. Chill until set.
