Sweet Potatoes and Marshmallows

Sweet potato chunks bake up tender and delicious in brown-sugar syrup under a cloud of toasted marshmallows.

Ingredients

  • Butter
  • 1 c. packed brown sugar
  • cut into 1" pieces
  • sliced, seeded
  • chopped
  • 12 oz. marshmallows

Instructions

Heat oven to 350°F.  Butter 13"x9" baking dish.

In a pot, melt 2 Tbs. butter. Stir in sugar and 3/4 cup water; bring to a boil. Over medium-low heat, cook until reduced (about 15 min.), stirring throughout.

In pot of boiling water, cook potatoes 5 min. Drain; arrange in baking dish.

Pour syrup over potatoes; top with lemon.

Cover, bake 35-45 min. until tender, spooning syrup over potatoes twice.

Remove lemon; stir in pecans. Top with marshmallows. 

Place in oven; increase temp to 400°F. Bake uncovered 5-7 min.
