Ingredients

  • 1 1/2 lbs. broccolini, trimmed
  • 2 Tbs. pine nuts
  • 1/3 cup olive oil
  • 2 Tbs. balsamic vinegar
  • 2 Tbs. chopped parsley
  • 1 clove garlic, minced
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 cup crumbled goat cheese, 2 oz.

Fit steamer basket or metal colander into pot; fill pot with water, making sure water does not touch bottom of basket. Over high heat, bring water to a boil. Reduce heat to medium-low. Add broccolini; cover. Cook until tender, about 5 min. Transfer broccolini to serving platter.

In dry skillet over medium heat, cook pine nuts, stirring, until toasted, about 3 min.

In bowl, whisk together oil, vinegar, parsley, garlic, salt and pepper. Drizzle over broccolini. Top with goat cheese and toasted pine nuts.
