This custom began as a way to celebrate the rededication of the Temple of Jerusalem following the Maccabean revolt. When the Temple was rededicated, there was only enough oil for the menorah to burn for one night. Miraculously, the oil lasted for eight days and nights, leading to the holiday as we know it.
