Ree Drummond, aka The Pioneer Woman, revealed her surprising cooking tip during a segment of her Food Network show. She seemed to recognize the absurdity of pouring heavy cream on raw meat, acknowledging, “What you are seeing right now might shock you,” while grinning like a scheming toddler. “I’m drizzling in some heavy cream for one very, very important reason,” she explained. “I want to. With sliders you only have a couple of bites for the flavor to shine through, and [adding heavy cream] just makes for a really rich experience.”
Drummond has apparently been doing this for quite some time and even has a blog post from 2010 where she shares this same trick. “It’ll give it a yummy richness and make you feel extra naughty,” she wrote.
If you think about it, Drummond’s seemingly crazy addition makes a lot of sense. At parties where there are sliders, there’s also usually an abundance of other finger foods. You really only want a bite or two of burger before you move on to other hors d’oeuvres like Mini Quiches in Phyllo Cups and Parmesan-Artichoke Stuffed Mushrooms — so make that bite extra sinful and delicious. After all, there’s nothing worse than biting into a dry, rubbery slider (and then forcing yourself to finish it because you don’t want to waste food).
And Drummond isn’t the only famous chef who advocates for adding heavy cream to ground beef. James Beard, the chef whose foundation awards what is sometimes called the “Oscars” of food, preferred his burgers with a dash of heavy cream.
