Who says that we only should eat tacos on Tuesday? Our BBQ Chicken Tacos come together in 30 minutes so they’re perfect for any busy weeknight. And thanks to versatile rotisserie chicken, this recipe comes together with just a handful of fresh + packaged ingredients. You can customize these tacos to your personal tastes: Like ’em spicy? We recommend the kiss of heat in this pick from Sweet Baby Ray’s. And the mango salsa that we serve with our BBQ Chicken Tacos would be great as an appetizer with chips or spooned over grilled salmon. You could even make the salsa heartier by stirring in a cup of rinsed and drained canned black beans.

Ingredients

  • 1 mango, pitted, peeled, cut into 1/2" pieces
  • 1 avocado, pitted, peeled, cut into 1/2" pieces
  • 1/4 cup chopped red onion
  • 1 small red or green jalapeño pepper, thinly sliced
  • 1 Tbs. lime juice
  • 1/4 tsp. salt
  • 3 cups shredded rotisserie chicken
  • 3/4 cup barbecue sauce
  • 2 tsp. ground cumin
  • 12 white corn tortillas
  • 3/4 cup fresh cilantro leaves

Instructions

In medium bowl, combine mango, avocado, onion, jalapeño, lime juice and salt; reserve.

In pot, combine chicken, barbecue sauce and cumin; over medium-low heat, cook, stirring occasionally, until heated through, 7–8 min.

 

Meanwhile, heat tortillas according to package directions. Evenly divide chicken and mango mixtures among tortillas. Top with cilantro.
