Short-Cut Chicken, Spinach and Goat Cheese Salad Recipe Is A Weeknight Supper Sensation

Let’s face it, no one likes to come home after a long day and slave over the stove. That’s why I’m always on the look-out for delicious dishes that are easy on the cook yet still satisfy hungry appetites. If you’re like me, then you have to try this Chicken, Spinach and Goat Cheese Salad recipe. It’s ready to eat in just 20 minutes. Best of all, it’s so fresh and colorful, everyone will be dying to dig in.

I’m a big fan of grocery store rotisserie chicken—so convenient, and versatile too! Snow peas have a mild slightly sweet taste and just take a few seconds in the microwave until they’re crisp-tender. We toss it all together with spinach, tomatoes and a quick Dijon vinaigrette. To finish, top with pepitas and hazelnuts for toasty crunch. Not a fan of goat cheese? Ingredients

  • 2 cups snow peas
  • 2 Tbs. olive oil
  • 1 Tbs. fresh lemon juice
  • 1 Tbs. Dijon mustard
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 6 cups baby spinach, 3 oz.
  • 2 cups (1/2” thick) strips rotisserie chicken
  • 1 cup grape tomatoes, halved
  • 1/3 cup chopped hazelnuts, toasted
  • 1/4 cup toasted pepitas
  • 1/2 cup crumbled goat cheese, 2 oz.

Place snow peas in large microwave-safe bowl; top with damp paper towels. Microwave in 15-sec. intervals, stirring, until crisp tender, about 45 sec.

Rinse snow peas under cold running water until cool. Drain well; pat dry. In large serving bowl, whisk together olive oil, lemon juice, mustard, salt and pepper. Add spinach, chicken strips, tomatoes, hazelnuts, pepitas and snow peas; toss until evenly coated and combined. Sprinkle with crumbled goat cheese. Serve immediately.
