One- Pan Crumb-Topped Baked Cod Recipe

When I want something easy to make for dinner, I always opt for a one-pan meal. Cod is the perfect protein because it easily cooks up in the oven. However, it’s a mild fish and needs strong seasonings to help bring up its level of flavor. That’s what inspired this Crumb-Topped Baked Cod recipe. It’s got a ton of savory flavor, plus the fish turns out nice and flaky.

The trick to getting the perfect flakiness is not letting the fish cook too long, If you overcook it, you’ll dry it out. But the star of the show is the breadcrumb topping—made with olive oil, parmesan and seasoned Italian breadcrumbs. Brush the fillets with mustard to ensure the breadcrumbs will stick on top. While cooking, the topping will get nice and crispy while the fish and veggies are baked and roasted to perfection. Squeeze a little lemon juice over the pan once everything is done for an extra zing! Cook along with our video!

Ingredients

  • 1½ lbs. Yukon Gold potatoes, cut into 1" pieces
  • 2 red peppers, quartered, seeded, cut into 1"-wide strips
  • 1 medium red onion, halved, cut into ½"-thick wedges
  • 6 Tbs. olive oil
  • ¼ tsp. salt
  • ¾ cup seasoned Italianstyle dry breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 6 (4–5 oz.) cod fillets
  • 6 tsp. Dijon mustard Fresh thyme

Heat oven to 400°F. On rimmed baking sheet, toss potatoes, peppers, onion, 2 Tbs. oil and salt until evenly coated. Roast 20 min.

Stir together breadcrumbs, Parmesan and remaining 4 Tbs. oil. Brush each cod fillet with 1 tsp. mustard.

Place cod on top of vegetables; top each fillet with about 3 Tbs. breadcrumb mixture. Roast until cod starts to flake and is opaque in thickest part and topping is browned, 10–15 min. Sprinkle with thyme.
