Key Lime Cheesecake Parfaits
This twist on cheesecake is perfect for a potluck, thanks to single-serve Mason jars that are easy to take on the go!

Ingredients
- 1 (1 oz.) pkg. fat-free sugar-free instant cheesecake pudding mix
- 1 ( 8 oz.) pkg. whipped topping
- 2 Tbs. lime juice
- 2 Tbs. lime zest
- Liquid green food coloring
- 1 cup graham cracker crumbs
Instructions
- Prepare instant cheesecake pudding mix according to package directions, using 1 cup milk. Fold in 2 cups whipped topping, lime juice and lime zest. Tint to desired green color with food coloring.
- Place 1 Tbs. graham cracker crumbs in each of eight ½ cup (4 oz.) canning jars. Divide half the pudding mixture evenly among jars. Repeat layering with remaining crumbs and pudding mixture.
- Top cheesecake-lime parfaits with remaining whipped topping. Garnish as desired with additional crumbs or fresh-sliced lime wedges.
