Our Key Lime Cheesecake Recipe Is No-Bake + Packed With Protein
There’s nothing quite as refreshing as a slice of key lime pie, and now we at the Woman’s World test kitchen have created a cheesecake version that is packed with protein thanks to a simple sneak-in of Greek yogurt for some of the cream cheese. This key lime cheesecake is crusted with buttery graham crackers and uses gelatin to set up the filling for a no-bake beauty. We like to garnish it with whipped cream rosettes, lime zest and thin lime twists for extra flair. If you’ve given it a try, comment below to let us know!

Ingredients
- 1 1/2 cups graham cracker crumbs
- 2 Tbs. + 1 1/4 cups sugar
- 6 Tbs. butter, melted
- 1 (1/4 oz.) env. unflavored gelatin
- 3 (8 oz.) pkgs. cream cheese, at room temp.
- 2 cups plain Greek yogurt, at room temp.
- 1/2 cup bottled key lime juice
- Whipped cream, thin lime slices and grated lime zest (optional)
Instructions
PrintCoat 8” springform pan with cooking spray. In bowl, combine graham cracker crumbs and 2 Tbs. sugar; add butter. Stir until crumbs are evenly moistened; press into bottom of pan. Freeze 30 min.
In microwave-safe bowl, sprinkle gelatin over 2 Tbs. cold water. Let stand until water is absorbed, about 5 min. Microwave until melted, about 10 sec.
On medium speed, beat cream cheese and remaining 1 1/4 cups sugar until blended and smooth, about 1 min. On low, beat in yogurt and lime juice until just blended. Stir in gelatin mixture. Pour over crust in pan; smooth top. Cover and chill until set, at least 4 hrs. Run small knife around inside edge of pan; remove side of pan. Transfer cake to serving plate. If desired, pipe or dollop on whipped cream and garnish with lime slices and zest.
