Mini Spinach-Feta Tartlets

For extra-easy prep, make the filling up to one day in advance, then fill and bake just before serving.

Ingredients

  • 1 (10 oz.) pkg. frozen chopped spinach, thawed and squeezed dry
  • ¾ cup crumbled feta cheese
  • 2 Tbs. Greek seasoning, like McCormick
  • 2 large eggs, beaten
  • 2 (1.9 oz.) pkgs. frozen mini phyllo cups

Instructions

  1. Heat oven to 350°F. In bowl, combine spinach, cheese, seasoning and eggs. Season with salt and pepper.
  2. Place mini phyllo cups on baking sheet. Divide spinach mixture evenly among cups. Bake 15 min. or until filling is heated through and cheese begins to melt. Serve warm.
