Mummy Linzer Cookies

Ingredients
- 1 cup all-purpose flour
- 1 cup almond flour
- ½ tsp. baking powder
- ½ tsp. ground cinnamon
- ¼ tsp. ground nutmeg
- ½ tsp. salt
- ½ cup butter, at room temp.
- ⅓ cup sugar
- 1 egg
- ⅔ cup cherry preserves
- 32 small candy eyes
Instructions
- Heat oven to 350°F. Line 2 baking sheets with parchment paper. Combine flour, almond flour, baking powder, cinnamon, nutmeg and salt; reserve. On medium speed, beat butter and sugar until combined, 1–2 min. Add egg; beat until blended, 1–2 min. On low, gradually beat in reserved flour mixture until smooth dough forms; shape into 2 disks. Wrap each in plastic wrap; chill until firm, at least 30 min.
- On lightly floured surface, roll 1 dough disk out to ⅛ ” thickness. Cut out 16 (3″x1½”) rectangles, rerolling scraps as needed. Spread each rectangle with 2 tsp. preserves; place 2″ apart on baking sheets. Roll out remaining dough to ⅛ ” thickness. Cut out thin strips. Arrange strips over jam to create mummy design as shown. Bake until golden, 12–14 min. Transfer from pans to racks; cool. Decorate with candy eyes.
