Ingredients
- 3 cups dry lentils
- 1 Tbs. olive oil
- 2 onions, diced
- 2 tsp. minced garlic
- 1 tsp. garam masala
- 1 tsp. curry powder
- 2 vegetable bouillon cubes
- 2 russet potatoes, peeled, diced
- 2 carrots, diced
Instructions
PrintSoak lentils in water 2 hrs.; drain. In large pot, heat oil over medium heat. Add onions; cook, stirring occasionally, until soft, 5 min. Add garlic and spices; cook, stirring, 3 min.
Add 5 cups water, bouillon, lentils, potatoes, carrots, ½ tsp. salt and ¼ tsp. pepper; bring to a boil. Reduce heat to low; simmer, partially covered, 15-20 min. Transfer half to blender; puree. Return to pot; stir.
