Easy Pan-Seared Veggie Black Bean Burritos Recipe is a Fiesta of Flavor
This hearty and satisfying dish cooks up in a flash
When I need a quick and healthy dinner, burritos are one of my go-to’s. They come together fast and they combine many delicious flavors. Currently I’m trying to eat more vegetables, and that was one of the inspirations for this pan-seared black bean burritos recipe. You can make the dish with ingredients already in your kitchen, including canned corn, black beans, and a bell pepper. Add some cooked quinoa and cilantro for flavor, wrap up the ingredients in a flour tortilla, sear in a skillet for just 30 seconds and dinner is done! Top the burritos with some jarred salsa and a few slices of avocado and yum! This meal has staying power, too, thanks to the protein-rich black beans, which are also packed with health-boosting fiber.

Ingredients
- 1 bell pepper, diced
- 2 (14 oz.) cans black beans, drained
- 1 (14 oz.) can corn, drained
- 1/4 cup chopped cilantro
- 1 1/2 cups cooked quinoa
- 8 flour tortillas
Instructions
PrintIn skillet, heat first 3 ingredients with 1/2 cup water over medium heat; cook until tender, 5–7 min.
Divide cilantro and quinoa evenly among centers of tortillas. Top each with black bean mixture. Roll; return to skillet. Sear, seam side down, 30 sec.
