Easy Peach-Blueberry Bundt Cake Recipe Is a Sweet Taste of Summer

A bundt cake is my go-to when I want a dessert that’s as pretty as it is delicious. It’s so versatile you can switch it up with the seasons and make whatever flavor bundt cake you’re craving. That’s what inspired this peach-blueberry bundt cake recipe. In the summer, when peaches and blueberries are at their peak, I want to put these juicy fruits in virtually every dessert! But I also want a recipe that’s quick and easy to make.

Fortunately, this bundt cake is super quick and simple, thanks to pound cake mix, peach puree and plenty of fresh blueberries. We even add a secret ingredient to give the cake out-of-this-world flavor — check out the recipe below to find out what it is. Ingredients

  • 5 peaches (about 1 lb., 4 oz.)
  • 1 cup blueberries
  • 2 (16 oz.) pkgs. pound cake mix
  • 4 eggs
  • ½ cup butter, at room temp.
  • 2 Tbs. peach liqueur
  • 1 cup vanilla frosting, from 16-oz. cont.
  • 3 cups mixed strawberries, blueberries and/or raspberries

Heat oven to 350°F. Grease and flour 12-cup Bundt pan. Peel and pit 3 peaches. In food processor, process peaches until smooth (will yield ½ cup puree); reserve.

In medium bowl, gently toss blueberries with 1 Tbs. cake mix. On low speed, beat remaining cake mixes with 1⅓ cups water, eggs, butter, reserved peach puree and liqueur until blended, 30 sec.; on medium speed, beat 2 min. Stir in blueberry mixture. Transfer to pan. Bake until toothpick inserted near center comes out clean, 45–50 min. Let cool 20 min. Transfer from pan to rack and let cool completely. Transfer to serving plate.

Pit and slice remaining 2 peaches. In microwave-safe bowl, microwave frosting in 10-sec. intervals, stirring, until melted; spoon over cake. Garnish with sliced peaches and berries.
