Deliciously Easy Potato Sausage Skillet Scramble Recipe Only $1.94 a Serving

This protein-packed breakfast comes together in a flash

When it comes to breakfast, I usually stop by the coffee shop and grab something to go. It’s quick, easy and their goodies are delicious! Trouble is, it gets to be expensive. Now this Potato Sausage Skillet Scramble is one of my new favorites. With only 5 ingredients, it’s ready to eat in 15 minutes. And at $1.94 per serving, it’s easier on my wallet too.

Sausage releases its own oil during cooking so just a spritz of cooking spray is all you need to get it going. Then, sauteing peppers and onion in the rendered drippings adds an extra layer of savory flavor. To speed things up, stir in frozen hash browns. The potatoes are partially cooked so they brown in practically no time. Scrambled the eggs in to all that goodness for a truly satisfying morning meal. Ingredients

  • 3 links sweet Italian sausage, cut into 1” pieces
  • 1/2 onion, chopped
  • 2 bell peppers, chopped
  • 2 cups frozen hash browns, thawed
  • 6 eggs, beaten

Coat nonstick skillet with cooking spray; over medium heat, cook sausage, stirring, until browned and no longer pink in centers, 7–8 min.

Add onion, peppers and hash browns; cook, stirring, until golden, 10 min. Add eggs and 1/2 tsp. salt; cook, stirring frequently, until fully cooked, 2-3 min.
