Tangy-Sweet Apple Slaw

Ingredients

  • 1/4 c. mayonnaise
  • 2 tbsp. cider vinegar
  • 2 tsp. Dijon mustard
  • 2 tsp. maple syrup
  • 2 c. coleslaw mix
  • 2 red or green apples, cored, chopped
  • 1 scallion, chopped

Instructions

In large bowl, whisk together mayonnaise, vinegar, mustard, and syrup. Season to taste with salt and pepper.

Add coleslaw mix and apples; toss until well coated. Cover; chill until flavors blend, about 30 min. Divide between serving bowls; sprinkle with scallion.
