- 1¼ cups oat flour
- ¾ cup sugar
- ½ cup cocoa powder
- 2 tsp. baking powder
- 1 cup almond milk
- ½ cup olive oil
- 2 Tbs. peanut butter
- 1 Tbs. cider vinegar
- 1 cup vegan dark chocolate chips
Instructions
PrintHeat oven to 400°F. Line 12 muffin cups with cupcake liners. In large bowl, whisk first 4 ingredients with ½ tsp. salt until combined. Fold in next 4 ingredients and ¾ cup chocolate chips; divide evenly among cupcake liners. Top with remaining ¼ cup chocolate chips.
Bake until toothpick inserted in centers comes out clean, 18–20 min. Let cool 10 min.
