Delicious Antipasto Pasta Salad Recipe For A Late Summer (Or Any Time!) Side

This tasty toss is ready to serve in just 20 minutes

Pasta salads are summer picnic staple. They’re easy to make and you can customize them with all sorts of delicious ingredients. Antipasto is a traditional Italian appetizer that usually consists of cured meat, olives, pickled vegetables cheese and more. That’s what inspired this Antipasto Pasta Salad recipe. We skip the meat but add plenty of other flavor-packed ingredients.

While bottled dressings are a convenient way to add fast flavor, a homemade vinaigrette is a cinch to whip up. We start with ingredients you probably already have on hand – lemon, olive oil, mustard, salt and pepper. Then we top mixed greens with marinated artichokes, sun-dried and fresh tomatoes, tangy kalamata olives and nutty Parmesan. To turn it into a complete meal simply add rotisserie chicken or sliced cooked steak. Best of all this winner is ready to eat in just 20 minutes. Give it a toss then let us know what you think.

Ingredients

  • 8 oz. penne pasta
  • 1 lemon
  • ¼ cup olive oil
  • 2 Tbs. whole-grain Dijon mustard
  • ½ tsp. salt
  • ¼ tsp. pepper
  • 6 cups mixed baby salad greens
  • 1 (14 oz.) can artichoke hearts, drained, quartered
  • 2 medium tomatoes, cut into 1" chunks
  • ¾ cup drained sun-dried tomatoes in oil, chopped
  • ½ cup pitted kalamata olives, sliced
  • ½ cup shaved Parmesan cheese

In large pot, cook pasta in boiling salted water according to package directions; drain. Rinse under cold water until cool; drain well. Reserve.

Grate 1 tsp. zest and squeeze 2 Tbs. juice from lemon into large bowl; whisk in oil, mustard, salt and pepper. Add pasta, greens, artichoke hearts, fresh and sundried tomatoes and olives; toss until coated in dressing. Transfer to serving bowl. Top with Parmesan shavings.
