Cheesy Baked Chicken Meatballs Alfredo Recipe is Super Satisfying and Delicious

Meatballs in tomato sauce is a beloved classic. It’s so good! And that got us thinking: What if we changed up the sauce to something different but equally delicious? That’s how this baked chicken meatballs Alfredo recipe was created. The meatballs are made with ground chicken, Parmesan cheese, garlic and fennel seeds for layers of flavor. Fennel seeds are traditionally used in Italian-style meatballs to add a subtle nutty flavor. They also pack a healthy punch — fennel has been shown to help with digestion. The meatballs bake for less then 20 minutes, then we combine them with Alfredo sauce and bake for a few minutes more. The sauce is rich, creamy and cheesy, and its flavors pair perfectly with the meatballs.

Ingredients

  • 2 eggs
  • 2 lbs. ground chicken
  • ⅓ cup seasoned dry breadcrumbs
  • ⅓ cup grated Parmesan cheese
  • 2 tsp. fennel seeds, crushed
  • 1 tsp. garlic powder
  • ¼ tsp. pepper
  • 1 (14.5 oz.) jar Alfredo sauce
  • 1 Tbs. chopped fresh parsley

Heat oven to 375°F. Coat large rimmed baking sheet with cooking spray. In large bowl, beat eggs. Add chicken, breadcrumbs, Parmesan cheese, fennel seeds, garlic powder and pepper; mix until blended. Shape into 20 meatballs (about 1⁄4 cup per). Transfer to baking sheet. Bake until no longer pink in centers, 18–20 min.

Spread sauce over bottom of 13"x9" baking dish; add meatballs. Bake until sauce is heated, 8–10 min. Remove from oven. Heat broiler. Broil until meatballs are lightly browned, 2–3 min. Serve sprinkled with chopped parsley.

Freeze it! Cool baked meatballs completely (do not add sauce). Transfer meatballs only to plastic freezer bag; seal. Freeze up to 3 months. To reheat: Thaw in refrigerator overnight. Heat oven to 375°F. Spread sauce in 13"x9" baking dish; add meatballs. Bake 20 min. until heated through. Broil until lightly browned, 2–3 min.
