Give Leftovers a Delicious Makeover With This Easy BBQ Chicken Tacos with Mango Salsa Recipe
I’m happy to say my gang loves my roast chicken! Trouble is, we never end up finishing the whole bird in one sitting. And if you’re like me, you’re always looking for delicious ways to transform leftovers into another great supper. Another thing I’m a big fan of? Fruit salsas. They’re a fun way to add a pop to lots of dishes, plus they’re so simple to put together. That’s what inspired us to come up with this BBQ Chicken Tacos with Mango Salsa recipe.
For the base of our tropical-inspired version, we start with juicy mango. But you can use any fruit you like — pineapple, strawberries, peaches or even blueberries. Just be sure to choose ripe in-season fruit for the best flavor. And every great salsa needs an acid. For ours, mango and lime juice pair perfectly together. But in a pinch, red wine vinegar will also do the job nicely. So, whip up a batch of fruit salsa for our quick-prep tacos! Then let us know what other fruit salsa you like to make.

Ingredients
- 1 mango, pitted, peeled and cut into ½” pieces
- 1 avocado, pitted, peeled and cut into ½” pieces
- 1/4 c. chopped red onion
- 1 small jalapeño pepper, thinly sliced
- 1 tbsp. lime juice
- 1/4 tsp. salt
- 3 c. shredded cooked chicken
- 3/4 c. barbecue sauce
- 2 tsp. ground cumin
- 12 white corn tortillas
- 3/4 c. fresh cilantro leaves
Instructions
PrintIn bowl, combine mango, avocado, onion, jalapeño, lime juice and salt; reserve.
In pot, combine chicken, barbecue sauce and cumin; cook over medium-low heat, stirring occasionally, until heated through, 7–8 min.
Meanwhile, heat corn tortillas according to package directions. Divide chicken and mango mixtures evenly among tortillas. Serve tacos topped with cilantro.
