Ingredients
- 3 lbs. russet or Idaho baking potatoes
- ½ cup half-and-half
- 6 Tbs. (3⁄4 stick) unsalted butter, at room temp.
- Salt
- Freshly ground black pepper
- Fresh chive sprigs and butter pat (optional)
Instructions
PrintPeel potatoes and cut into 1" chunks. In pot, mix potatoes and enough lightly salted water to cover by 1". Cover; over high heat, bring to a boil. Reduce heat to medium. Cook, covered, until potatoes are fork tender, 15-20 min. Drain completely.
Return potatoes to pot. Using potato masher or electric mixer, mash potatoes, gradually adding half-and-half and 6 Tbs. butter until smooth and fluffy. Season with salt and pepper. Transfer to serving bowl. If desired, top with chives and pat of butter.
